Squid is tender when cooked either briefly or for a very long time — the middle ground is where it turns to rubber. In an air fryer you take the short route. Scoring it before cooking keeps it from curling up.

What usually goes wrong
- Past twelve minutes — rubbery
- No scoring — it curls up tightly
