Sweetness comes from time, not temperature: the longer the starch sits in the range where it converts to sugar, the sweeter the result. That is why a long roast at 200°C beats a fast blast. Leaving the skin slightly damp after washing keeps it from drying out.
For a medium 200 g sweet potato. Thick ones can take 45-50 minutes; halved, they drop to twenty. If sizes vary, pull the small ones early.
