Cook frozen dumplings straight from the freezer — thawing makes the wrapper damp, kills the crunch, and leaves it prone to tearing in the basket. A light spray of oil gets you the glossy browning of a restaurant potsticker; one or two spritzes is plenty.
Lay dumplings in a single layer without overlapping. Add 2-3 minutes for a full basket, and cook 20-plus dumplings in two batches — crowding is what makes them soggy.
