Air-fried pork belly is leaner than pan-fried because the fat drips away, but the surface dries out faster — so keep the heat high and the time short. Flip once, and spread the pieces out for the last two minutes to crisp the edges.
Pork belly renders a lot of fat; a splash of water in the drawer under the basket cuts the smoke dramatically. Times assume 1 cm slices — thicker cuts need three to four minutes more.
