An air fryer will not give you the hard sear of a cast-iron pan, but it cooks a thick cut far more evenly. Two habits do most of the work: thirty minutes at room temperature before, five minutes of rest after.
Times assume 2.5 cm. Medium-rare around eight minutes, medium ten to twelve, well done fourteen — halve them for thin cuts.
