How much water you press out decides the texture. Fifteen minutes wrapped in paper towel under a weight gives you crisp outside, soft inside. A thin dusting of starch takes it close to deep-fried.

What usually goes wrong
- Not pressing it — the surface will never crisp
- Using silken tofu — it collapses
- Gripping with tongs when flipping — it breaks
