Always score chestnuts before roasting — with nowhere for the steam to go, they can burst. Cut a deep cross on the flat side, and peel them while they are still hot, when the skin comes away cleanly.
For medium chestnuts. Large ones need 20-25 minutes, and a full basket about five minutes more.
